==================== EASY MEATLOAF COOK TIME: 50-60 minutes surge@doubleincision.com ==================== super easy, filling meatloaf with just the right amount of spice. you can easily multiply the amounts in this recipe to make a huge honkin' cake of meat that'll feed you for days. +-+-+-+-+-+-+-+-+-+-+ { INGREDIENTS } loaf: - 1 lb ground beef - 2 eggs - 1/2 c breadcrumbs - 1/2 c finely chopped sweet onion - 4 cloves garlic - 4 tbsp ketchup - 2 tbsp worcestershire sauce - 2 tbsp spicy mustard + dijon mustard if you prefer. spicy just gives it a little bit of extra zing, in my opinion ;) - 1 tsp salt - 1 tsp black pepper sauce: - 1/2 c ketchup - 3 tbsp light brown sugar + this amount of brown sugar makes for a moderately sweet sauce. decrease or increase to your liking! - 2 tsp spicy mustard + again, dijon if preferred - 1/4 tsp ground nutmeg { DIRECTIONS } 1. preheat oven to 350 F. lightly grease a rectangular loaf pan with cooking spray. 2. in a large bowl, combine all loaf ingredients. mix and mush together until everything is thoroughly combined. using your hands to mix is the most efficient way to do so, if you don't mind messy, meaty hands! 3. scoop the meat mixture into your pan. make sure it's spread evenly, and pack it in there good so it keeps its loafy shape. the top should be flat, not lumpy. 4. bake for 30 minutes. 5. while the loaf is baking, combine all sauce ingredients in a medium bowl. stir well until evenly mixed. 6. after 30 minutes, remove the loaf from the oven, and spoon your sauce mixture on top. spread the sauce into an even layer, coating the entire top of the meatloaf. 7. return loaf to oven for 15 to 20 minutes, until internal temperature reaches at least 160 F.
