==================== SOFT SUGAR COOKIES COOK TIME: 30 minutes surge@doubleincision.com ==================== these are the kind of cookies that are so soft, they're practically medium rare in the center. my husband and i can and will eat the entire batch in, like, 2 days. the best part about them is that you don't need to chill the dough :D you will need an electric mixer for this recipe! +-+-+-+-+-+-+-+-+-+-+ { INGREDIENTS } - 2 3/4 c all-purpose flour - 1/2 tsp baking powder - 1 tsp baking soda - 1/2 tsp salt - 1 c granulated sugar - 2 tbsp light brown sugar - 1 c unsalted butter + room temperature, not melted - 1 egg - 3 tsp vanilla extract { DIRECTIONS } 1. preheat oven to 350 F. line a baking sheet with parchment paper. 2. in a mixing bowl, combine flour, baking soda, baking powder, and salt. set aside. 3. in a separate mixing bowl, combine the butter, granulated sugar, and brown sugar. cream together with your mixer, on medium speed, until it becomes fluffy and lighter in color. 4. add the egg and vanilla extract to the butter mixture. mix to combine. 5. slowly, add the flour and sugar mixture. add about 1/3 of it at a time, mixing a little bit between parts. continue to mix until well combined, but don't over-mix. once the dough becomes thick and isn't sticky, stop mixing! 6. measure 1 1/2 tbsp-sized balls of dough. before placing on baking sheet, roll the doughball in a little extra sugar. 7. bake for 7 to 8 minutes. the dough should spread, and will look undercooked, but that's how you want it. remove from the oven before the edges turn golden. 8. allow the cookies to cool on the baking sheet for about 5 minutes, then transfer to a wire rack or countertop to finish cooling.
